I take 15,000 - 20,000 word tales for Burning Effigy chapbooks and I have had authors withdraw submitted works for various reasons (I couldn't publish a work in their desired time frame, another house expressed interest, etc.). Though sometimes this can be disappointing, especially if it was a project I was particularly interested in (as was the case when I couldn't promise to meet the desired timeline), I also realize this it is the nature of the business and would not want to spoil a future working relationship over something so trivial. That said, my advice to you is not to sweat it, most pro publishers are also pro about this.

Try Kitchen Confidential! It's not as good as the BBC version, but it's still fun.
